Captivating Traditional Lion Dance Performances
As it has for the past four decades, The Peninsula Hong Kong will herald the arrival of the Lunar New Year with one of the city’s most breathtaking lion and dragon dance performances – a tradition that symbolises prosperity and good luck for the upcoming year. The awakening ritual of nine lions and one dragon will begin at 9:30 am on 29 January 2025 in the hotel forecourt, after which the dance will continue through the lobby to other areas of the hotel to bring luck, blessings and good fortune to both hotel guests and staff members alike throughout the year.
The hotel takes great care to uphold its legacy for staging the most impressive and spellbinding dance performance in Hong Kong. This year, the dance troupe of nine lions and one dragon will include three exclusive Peninsula red and gold lions, all of whose costumes depict the Chinese character for the hotel’s name on the back of their heads.
Guests who visit the hotel on 29 January 2025 can also receive their own auspicious Lunar New Year keepsakes to take home with them: fai chun, traditional calligraphy ornaments representing good health, happiness and prosperity, will be distributed at The Verandah and Spring Moon from 11:30 am – 2:30 pm and 6:00 pm – 8:00 pm.

Guests are invited to welcome the Lunar New Year by gathering for Michelin-starred Cantonese cuisine at Spring Moon. Special festive offerings from Chef Lam Yuk Ming and his team include traditional dishes like Poon Choi, a signature dish which signifies abundance and affluence for the year ahead. The preparation, which is meant for sharing, brims with bountiful ingredients including whole 5-head abalones, fish maws, sea cucumbers, Hokkaido scallops, sea shrimps, dried oysters, sea moss, minced carp balls, roasted duck, black mushrooms, poached chicken, soaked fried pig skin, dried bean curd sheets and turnip.
Poon Choi is available for à la carte order at Spring Moon from 29 January – 4 February 2025, or for takeaway from 20 January – 4 February 2025. The dish is priced at HK$ 2,688 for two people and HK$ 4,988 for four people.

IHG Unveils Renovated CHAR Bar & Grill in Greater China
IHG Hotels & Resorts recently announced a renovation of its standalone Western restaurant brand, CHAR Bar & Grill, in Greater China. The revamp, which has been carried out in collaboration with an international culinary team and mixologists, will result in an entirely new dining and cocktail menu.
CHAR Bar & Grill 2.0 revolves around the ‘new five senses’ of relaxation, presence, originality, atmosphere, and social interaction. The design aims to uniquely combine Chinese and Western cultures. The focus is on exceptional culinary artistry, charcoal grilling, carefully controlled heat and fresh ingredients. The dining experience is enhanced with a creative selection of cocktails.
The renovation introduces a food and cocktail pairing for the first time. Jerome Qiu, Chief Operating Officer of IHG Greater China, stated that the revamped CHAR Bar & Grill aims to cater to the rising demand amongst consumers for unique experiences and high-quality dining environments.
The revamped menu features dishes created by the CHAR Bar & Grill team, the LTH team, and chef consultant Brian Arruda. It is designed to be shared and focuses on the authentic flavors of charcoal grilling. It accommodates both meat lovers and vegetarians. The new cocktails were developed with Lio Yao, a renowned bar partner. They draw inspiration from 20th-century philosophy and literature, incorporating four core concepts: authenticity, creativity, local elements, and sustainability.
The restaurant’s ambiance enhances social interaction and creates a relaxed atmosphere. Live charcoal cooking demonstrations add to the dining experience, while warm lighting and music complement the setting.

Regent Taste Studio represents an inventive new avenue of unexpected collaboration to provide guests with an ambitious dining experience featuring elements of interactive pop-up art.
The second season presents ‘The Magic of Beauty of Contrast’, drawing inspiration from the stained-glass artwork of Regent Shanghai on The Bund.
By teaming up with an eclectic roster of artists ranging from modern dance and experimental music to glassmaking and digital multimedia, the theme eloquently interprets five chapters: ‘Revive to Life ‘, ‘Elevate Above the Sea’, ‘Melody of Food’, ‘Where Time Can Not Find Us’ and ‘Timeless Uplifting’ in the light and shadow digital interactive art.
An out-of-this-world atmosphere awaits diners as they find themselves surrounded by visual lighting and sound effects to savor the ‘Beauty of Contrast’ that defines the Regent.
Chapter 1 ‘Revive to Life’: As ice and snow melts, light and shadow interweave tranquility and vitality. With guidance from ‘Regent Experience Agents’, an odyssey into the mysteries of revivification and nature await. Snowflake Lobster Tartlet, with its crystal-like appearance, symbolizes the fading of winter’s cold. Its delicate taste noted with citrus dances on the tip of the tongue, awakening a desire for freshness; Crystal Foie Gras is inspired by the fluid form of crystal chandeliers and stairs, and the Tuna Tartare cunningly displays elements of ice and fire; King Crab Roulade captures the essence of the ocean and pays tribute to the melting snow flowing into the sea; Smoked Eel Pillow personifies the first melting of snow in the Spring, gently awakening the sleeping earth and singing an ode to nature with every bite.
Chapter 2 ‘Elevate Above the Sea’: Seagulls shuffle through the waves, seemingly dancing with the sea, flying far above the noise with power and freedom. Guests will dive into a digital art space that takes them soaring to new heights. The Fish Sauce Chili Oil Foam and exquisite plating are reminiscent of the calm after a wave crashes. Its rich flavors tell of the purification and restoration of nature’s rhythm. Fresh and salty caviar and the Leopard Coral Grouper bring the taste of the ocean, symbolizing rebirth after the storm. Every bite is a tribute to the indomitable spirit of seagulls flying above the sea.
Chapter 3 ‘Melody of Food’: Everything that stands before us is a gift from nature. This is an endeavor to Elevate Above the Noise to transform the elements into natural melodies leading to sensory sublimation. This time, artists and chefs work side by side to compose a song that resonates with novel instruments and fresh ingredients such as morel mushroom, asparagus and smoked potatoes foam to give way to the chef’s ingenuity. The ingredients sprout from each plate like a lush miniature forest, while a combination of morels and bamboo highlights the vigor of Mother Earth. An exquisite Smoked Fruit Puree embellishment not only adds flavor, but also the mystery and depth of the Yunnan Forest.
Chapter 4 ‘Where Time Can Not Find Us’: In glass, moments in time transcend thought. The colors of stained-glass have been baptized by light over the years, and shine anew once again. Through the magic of holographic digital art, time freezes instances of luxury into eternity. The Wagyu Beef wrapped like a gift box symbolizes these precious moments. As it is unveiled, the aroma of black truffles stun diners, sealing time and beauty as they stand still, above the noise.
Chapter 5 ‘Timeless Uplifting’: A crystal-clear world glistens, witnessing the flow of time and the power of memory. Lemon Sugar Sphere uncover a parallel sensory universe, with their unique taste and texture intertwined with eternal moments of synesthesia. When the candy balls are broken, a visual transformation unfolds, creating a harmonic aftertaste to conclude the culinary journey. Guests are seemingly transported to a sparkling river, accompanied by Regent’s customized flower arrangement art ‘Seagull and flying horses’, ‘cyan lion and white elephant’, ‘dragon above the tides ‘and ‘Aqua Luna boat’, highlighting the brand’s one-of-a-kind charm and creative expression.
Unearthing inspiration to Elevate Above the Noise
The latest season of Regent Taste Studio was featured at Regent Shanghai on The Bund, which just had its grand opening on November 1.
Nested along the bank of the Huangpu River. Recreating a modern, luxurious guest journey, the hotel carries with it the long history of the Seamen’s Club and the Seagull Hotel.

In the heart of Emirates’ busiest lounge in Dubai – the Concourse B Business Class Lounge in Terminal 3, Dubai International Airport, sits a one-of-kind experience – the Moët & Chandon Champagne Lounge.
Continuing Emirates and Moët Hennessy’s longstanding partnership of 32 years, the latest collaboration features a newly designed champagne and canapés pairing menu, curated over several months by Emirates master chefs and champagne experts from the house of Moët & Chandon.
Created and constructed exclusively for Emirates, the elegant Moët & Chandon Champagne Lounge features an eye-catching golden wave design adorned with 2,400 intricate gold leaves applied individually by hand. Within the lounge, four of the finest Moët & Chandon champagnes are available, with latest collection launched last month featuring Moët & Chandon Impérial, Rosé Impérial, Nectar Impérial and Grand Vintage 2013.
Before boarding a flight, Emirates customers are invited to relax in the lounge, and transform their waiting time into a learning experience and exploration of the pairing of iconic champagne and meticulously crafted cuisine. Customers will be able to sample and explore the pairings, which were crafted based on three principles;
Minimalist ingredients with maximum impact – Emirates chefs prioritized using high-quality, seasonal ingredients to create a symphony of flavours without overwhelming the palate. This approach allows the natural notes of the champagne to shine through and creates a more balanced dining experience, like the signature foie gras offering which features only three components: brioche, foie gras, and fig. This allows each ingredient to play its part, highlighting the richness of the foie gras with the sweetness of the fig and the buttery base of the brioche.
Flavour harmony – Emirates and Moët & Chandon have carefully considered the flavour profiles of both the champagne and the canapés, ensuring they complement each other seamlessly, like incorporating berries or citrus that echo the fruit notes in the champagne, or balancing creamy textures with a touch of acidity.
Visual appeal – The pairing experts from Emirates and Moët & Chandon believe food should be a feast for the eyes as well as the taste buds and took pride in crafting visually stunning canapés that are meticulously arranged and plated, adding to the immersive experience.
The first Champagne guests are invited to sample is Moët Impérial Brut. With a striking nose of green apple and citrus, followed by mineral freshness and white flowers – this champagne is cellared for 24 months. It offers the blonde nuances of brioche, grains and fresh nuts, and its fine bubbles and subtle palate lends itself perfectly to seafood and pronounced acidity tempered by fat.
Emirates has paired Moët Impérial Brut with four individual dishes, which are served throughout the month; Salmon tiradito on calamansi leche de tigre, Grilled Obsiblue shrimps, watermelon and feta salad, Tuna tartare with fresh orange segment, or Scallop tataki.
The second Champagne featured is Moët Rosé Impérial, cellared for 21 months and offering an intense bouquet of red fruits, rose petals and florals, underscored by a hint of pepper.
This cuvée pairs perfectly with colourful summer vegetables and fresh green herbs. Emirates recommends trying Moët Impérial Rosé with four paired dishes, served throughout the month; Beetroot moutabel with akawi cheese and pine seeds, Fennel infused spinach and asparagus dip with grilled asparagus and yuzu pearls, Beetroot tartare with sesame seeds and dill or Bocconcini cheese with basil infused green melon and pine seeds.
The third recommended Champagne is the memorable Moët Grand Vintage 2013. Grand Vintage 2013 is a unique cuvée, benefitting from 7 years in the cellar and presenting soft autumnal notes, followed by a palate of ripe pear, grapefruit and toasted nuts.
To enhance the delicacy of the Champagne, Emirates master chefs have paired Moët Grand Vintage 2013 with four bespoke dishes, served throughout the month; Foie gras on toasted brioche with fresh fig and Maldon salt, Duck rillette with chive mayonnaise, Foie gras on toasted brioche with quince and Maldon salt and Foie gras on toasted brioche with passionfruit, mango and Maldon salt.
The final Champagne featured in the pairing menu is the unique Moët Nectar Impérial, cellared for 18 months and featuring flavours of pineapple, mango, plum and apricot with a dash of vanilla.
Ideally served with a sweet and fruity dessert, Emirates is serving Nectar Impérial with four dessert canapés, served throughout the month; Tropical crème, Mango trifle, Lemon cream pannacotta, and Blueberry cheesecake.

Marriott Bonvoy Launches 2024 “Taste of Wonders” With Themed Menus In Over 300 Chinese Restaurants Across Greater China
Marriott Bonvoy recently officially launched its 2024 “Taste of Wonders” F&B marketing campaign in Greater China with the debut of a food documentary titled “Taste of Wonders, Flavors of North and South.”
Developed in collaboration with renowned Chinese documentary director Chen Xiaoqing, the film explores the vibrant people and culture behind Chinese cuisine, and centers around the Chinese word “Xian,” which means both “fresh ingredients” and “delicate flavor.”
As part of the campaign, over 300 Chinese restaurants across Greater China will create themed menus based on “Seasonal Cuisines,” “Wine/Tea Pairing,” “Home Style Dishes” and “Local Menu Co-Creation.”
Exploring Connections: Fresh Food, Seasonal Emblems and Hometown Memories
“Taste of Wonders, Flavors of North and South” delves into the emotional connections people have with food. Director and advisor to the campaign Chen Xiaoqing commented, “Our ancestors took inspiration for the word ‘Xian’ from the harvests of the land, lakes and seas. A stellar lineup of talent from The Ritz-Carlton, Tokyo’s restaurants will participate, including Executive Chef Teruki Murashima of Héritage by Kei Kobayashi, Chef de Cuisine Hisao Ishida from Hinokizaka, and Chef Takuji Nakano, Head Chef of Towers. Expect sublime experiences including bespoke menus paired with exquisite wines from Château Haut-Brion, or a crafted menu pairing fresh fish with sake at Hinokizaka. Chef Vladmir Veiga, Resident Chef at Arola and One-Michelin-starred LAB by Sergio Arola at Penha Longa Resort (part of The Ritz-Carlton portfolio of hotels and resorts), will collaborate with Chef Takuji Nakano in a matcha themed brunch at Towers.
In addition, Kentaro Wada, Head Bartender at The Bar, who won the Chivas Masters 2018 cocktail competition, and Yosuke Asano from The Ritz-Carlton, Kyoto, winner of Bacardi Legacy in Japan in 2020, will be creating cocktails inspired by the Nakasendo route based on the microclimates linking the different seasons of Japan and the ingredients native to the country.
As well as a cocktail masterclass focusing on Japanese products, the hotel will be unveiling their new curated Afternoon Tea in collaboration with SUGI BEE GARDEN in Lobby Lounge.
The St. Regis Bali: October 4 – 6
Guests can look forward to indulging in a variety of Balinese delights created by renowned chefs and bartenders. To kick things off, Arne Riehn, who leads the culinary brigade at the Michelin-starred IGNIV at The St. Regis Bangkok will be taking over Kayuputi for two nights to bring their signature concept to Bali.
Kayuputi will also be elevating their already popular Brunch with signature dishes from participating chefs. For a truly Balinese experience, guests are invited to join Spencer Patrick, who was once the youngest chef to ever receive a Michelin star and has two decades of Michelin star experience. He oversees the culinary execution at Harrisons, the One Hat restaurant in the Australian Good Food Guide, for an elevated beachside barbecue dinner incorporating Australian techniques using the finest Balinese ingredients.
A talented trio of mixologists from The St. Regis hotels in Singapore, Jakarta and Bali, will join forces to showcase The St. Regis rituals and present guests with exceptionally crafted cocktails including bespoke pairings and guest shift bar takeovers.
The Ritz-Carlton, Melbourne: October 17 – 19
Launching the Melbourne leg of the Luxury Group Dining Series, Chef Angelo Aglianó of Michelin-starred Tosca di Angelo at The Ritz-Carlton, Hong Kong will be bringing his signature dishes to a bespoke lunch at Atria, the One Hat restaurant in the Australian Good Food Guide.
Situated on the 80th floor, Cameo was recently listed as Australia’s Best Hotel Bar. It will spotlight a takeover from The Tokyo Toranomon EDITION’s Gold Bar, included for the past few years in Asia’s 50 Best Bars’ extended list. It is helmed by Head Bartender Hideyuki Saito, who placed in the top eight at the Bacardi Legacy 2017 Global Final cocktail competition in Berlin.
Focusing on locally sourced ingredients, Chef Angelo will also be creating distinct canapés for ‘Indulgence Hour’ at the Lobby Lounge, elevating after-work drinks for the ultimate luxury interpretation of happy hour.
